We’ll begin by mastering the dough: how to achieve the perfect balance of butter, flour, and technique to create layers that bake up crisp, golden, and irresistible. From there, you’ll craft two distinct galettes that showcase just how versatile this rustic pastry can be.

On the sweet side, we’ll make a “bluebarb” galette—a vibrant mix of blueberries and rhubarb baked into a jammy, jewel-toned filling wrapped in your handmade crust. Then, for a savorier turn, you’ll build a mushroom–Stilton galette, layered with earthy sautéed mushrooms and rich, tangy Stilton for a showstopping entrée or appetizer.

By the end of class, you’ll know how to roll, fold, and bake galettes with confidence—and you’ll have two stunning variations perfect for any occasion.
